Apple-Chicken Salad [Phase1]

Place the canned chicken in a small bowl and shred up with two forks, pulling from opposite directions.

Chop the onion, apple, nuts, and carrot and place in the bowl. Add in the greek yogurt, apple cider vinegar and salt and pepper, taste and adjust seasoning.

Serve on top of mixed greens and Enjoy!

7 oz canned chicken (waterpacked)

0.5 cup chopped red onion

1 apple (peel on, chopped)

1 large carrot, chopped2 tbsp chopped almonds

non-fat greek yogurt (1/4 cup)

1 tsp apple cider vinegar

salt and pepper to taste

2-4 cups of mixed greens

I wish the recipes on this site tied back to the food options for phase 1. I can sure calculate everything out but it would really help if the PS1000 recipes did that. 1/4 vegetable, 1/2 fruit, 1 protien, 1/2 a healthy fat. I’m really trying to stick to the book.

Can we use regular chicken breast instead of canned? if so what amount would we use? 🙂

This was great! I cut the carrots and almonds due to allergies, and added some mustard seed, garlic powder, lemon juice, and a little nutmeg. It was great over arugula. Would also be good with some other fresh herbs.

this looks really good and can’t wait to try it. I normally make my own chicken stock by boiling a whole chicken with some herbs, carrots, celery and onion so I will use the breast from that however can I also use the chicken broth that I make in phase 1?
