Begin by preparing the vinaigrette by simply mixing the Dijon mustard and apple cider vinegar together with a teaspoon of salt or pepper and setting it aside.
Next, slice the grapefruit and chop the avocado into chunks. Add this into a large bowl with the watercress, romaine, parsley, and almonds.
Toss with the vinaigrette. Enjoy.
1 tablespoon Dijon mustard
2 tablespoons apple cider vinegar
¼ teaspoon sea salt and pepper
1 Avocado, cut into chunks
1 sprig/bunch watercress
1 grapefruit sliced
2 Cups romaine lettuce
1 tablespoon parsley
¼ cup almonds
