Begin by blending the blueberries with water or almond milk until smooth. Then split up the eggs by putting the egg yolks in one bowl and the egg whites in another. Then in a bowl mix up the yolks and blend for a minute. Add in the coconut milk, vanilla extract, and nutmeg.
Once well mixed, add in the blueberry puree. Blend these ingredients together until smooth.
Whip up the egg whites with a whisk until they are frothy. Slowly blend the egg whites into the mixture, and out in the refrigerator to cool until served. Sprinkle cinnamon and add stevia to taste. Enjoy.
