Cauliflower Rice Mushroom Risotto

Directions
Begin by putting the head of cauliflower in the food processor and rice it using the shred attachment. Then in a large skillet over medium heat, melt the coconut oil. Add in the mushrooms and garlic and cook for about 2 to 3 minutes.
Once cooked, add in the cauliflower rice along with the garlic powder, salt, and pepper. Stir to combine it well and let it cook for another 7 to 10 minutes. Remove from the heat and serve. Enjoy.

1 cauliflower head, riced
2 tablespoons coconut oil
3 oz. shiitake mushrooms
2 cloves garlic
½ teaspoon garlic powder
Dash of Salt
Dash of Pepper
