Cold Summer Soup

Directions
Put all products in a blender/food processor and crush it to a paste like consistency. If the mass is too thick, you can add more buttermilk.
Taste and add salt, pepper or lemon juice to adjust. Best served with sprinkles of olive oil on top.
This delicious soup is meant to be served alone but as an option could be served with oven-baked potato slices (Phases 2 and 3).

6 cucumbers
2 avocados
1/2 jalapeno
1 large clove garlic
Handful of fresh basil leaves
Handful of dill
5 sticks of scallions
1/2 lemon juice
20 oz buttermilk
3 tbsp olive oil
2 tsp apple vinegar
1 tsp salt
1/4 tsp pepper
