Begin by boiling the fresh squeezed orange juice, champagne vinegar, and the stevia in a small saucepan over medium heat. Let this cook for 15 minutes until it is about a ½ cup liquid.
Whisk in the olive oil and dash of salt and let it stand for 2 minutes.
Next, combine blueberries, cut up strawberries, and sliced peaches into a large bowl.
Allow the fruit to marinate in the vinaigrette for 10-20 minutes before serving and top it with basil.
1 cup fresh squeezed juice orange juice
2 or 3 packets Stevia
1 ½ tablespoons champagne vinegar
1 tablespoon extra-virgin olive oil
Dash of salt
1 ½ cups fresh blueberries
1 pound fresh strawberries, halved
1 large peach, cut into wedges
1/4 cup fresh basil leaves
