In an oven safe single serve size baking dish mix crushed melba and broth together to make a “dough”. Bake in oven for 5 minutes.
After it is done, raise oven temp to 425F.
Whisk eggs together until well combined.
Add in veggies and seasonings. Mix until veggies are all covered with egg mixture.
Pour over “crust”. Bake for 30-40 minutes, or until eggs have risen in the middle and it’s brown and crusty around the edges.
Variation: add cottage 1 Tbsp of cottage cheese for creamier taste.
2 melba toasts crushed
1 Tbsp vegetable broth
2 teaspoons low sodium/no msg soy sauce
1 cup chopped baby spinach
1/2 roma tomato
1 Tbsp minced onion
1 clove garlic – minced

I bake quite a bit and have made quiche crust using mushrooms and crumbs. I can tell you that there is NO WAY
that you can make the quiche in the photo above using 2 melba toasts! from the size of the cherry tomatoes this appears to be a 10″
crust. You would need at least the whole box of melba snacks to make a crust like that using only water and crushed toasts. This is very misleading.
Who is the “chef” that posted this recipe?

I love quiche. This recipe gives me hope that I can do this. It is creative. I would never have thought of Melba toast a crust.
