Slice up the tomatoes and place in a serving bowl, its ok to have the juices in there as well.
In a smaller bowl, combine the remaining ingredients and whisk well.
Drizzle dressing over the tomatoes, and gently combine.
Eat at this point, or place in the fridge to marinate for a few hours, serve with basil garnish if desired.

4 Large Heirloom Tomatoes, or any variety of tomato
1/2 shallot, diced
1/4 cup apple cider vinegar
2 tbsp olive oil
1 tsp course sea salt
1/4 tsp fresh black pepper
a few leaves of fresh basil, diced (optional)
