Greek Style Chicken and Chickpea Salad [Phase 1]

Directions

Mix all ingredients well in a bowl and portion out 4 servings worth. Add salt and pepper until the desired flavor is reached.Enjoy! Also great for bringing to a potluck!

Ingredients

14 1/2 oz. can of chickpeas (drained and rinsed)

1 medium sized avocado

4 stalks of green onions, diced

1/2 cucumber, cut into bite-sized pieces

1/2 tbsp olive oil

8 oz. cooked chicken breasts (shredded) *could also use canned chicken

1 cup cherry tomatoes, halved

1 lime, juiced

dash of salt and pepper to taste
