Brown the beef in a pan and add in the onions, carrots, celery, mushrooms and zucchini. Cook until all ingredients are slightly tender.

Add in all of the seasonings to the pan, and cook for 1 minute. Add in the black beans, tomatoes and stock. Bring to a boil, and reduce the heat and simmer for another 30 minutes until fragrant.

When you are ready to serve it, if you would like to add in slaw to the bottom of your bowl, please do! It will cook once the hot soup goes over top of it.


1 lb Ground beef

1 tsp Garlic powder, Pepper, Chili flakes, and Kosher salt

1 Can of black beans, drained and rinsed

8 oz. Fresh green beans

1 Medium onion

1 Carrot

1 Stalk of Celery

1 Zucchini

8 oz. Mushrooms

1 Can of diced tomatoes

4 cups Chicken Stock or Broth

1 cup Slaw (Optional)

I used ground turkey, no sodium broth, no mushrooms and rotel tomatoes plus no slaw. It was delicious and my husband really liked it which is a bonus!

I made this with Ground Turkey, it was delicious. My husband hates mushrooms so I did not add those and I used no sodium chicken broth. No slaw. I did use Rotel tomatoes though. My husband really liked it as well!

Delicious! Just getting started back on the plan and this was definitely a winner to start back with. It is very hearty and filling. My husband commented on how perfect the spice level is on the soup.

I made this soup tonight for dinner. It was wonderful. Both of the men in my family loved it too! So healthy and great on a cold winter night. I did add more red pepper flakes, we all like heat!

I highly recommend this. It says 8 servings. I wish it would be noted if they are 1 cup servings, 2 cup servings etc. it would be so much easier than having to guess and try to measure out 8 equal servings.

Excellent! Spices were great. I hate to waste food so I used the whole bunch of celery instead of 1 stalk. Also doubled the green beans and swapped out frozen as my grocery didn’t have fresh. Excellent and makes a lot! Perfect for meal prepping on the weekend.

This was very good but I added cilantro also and I used low sodium beef broth. I also didn’t have zucchini so I added more celery and extra garlic.

Super tasty! Added beef broth instead of chicken broth. It just made more sense. The only difference is the sodium content unless you use the low sodium broth.
