Begin by preheating the oven to 200 degrees Fahrenheit.
Slice the pears very thin from the stem to the bottom. Be sure to remove any seeds. If you happen to have a mandolin, using that is recommended. Then line two baking sheets with parchment paper and lay the pear slices out across them all. Sprinkle both sides of the pears with cinnamon and place the baking sheets in the oven to bake for about an hour. Remove them after an hour and flip them over then place them back in the oven to bake for another hour.
Repeat this step one more time. They should bake for a total of three hours. Then remove them from the oven, allow them to cool. Enjoy!
