Bring water to boil, then remove from heat. Add thyme, cover, and let steep for 5 to 10 minutes minutes.
Remove thyme and transfer to a glass jar, let it cool, then refrigerate until cold. Blend peaches in a food processor or blender until smooth. Strain through fine mesh sieve. Combine peach puree with lemon juice in a pitcher.
Stir in 3 cups of cold water, add Stevia to taste. If desired, serve over ice cubes.
