Begin by dicing the avocado and mincing the mint and dill. Mix these ingredients and season with lemon, salt, and pepper.
On a lettuce leaf, spread two tablespoons of the mixture and top with thin slices of cucumber and spinach. Roll them up. Enjoy.
1 ripe avocado
1 fresh lemon
2 tablespoons mint
2 tablespoons dill
1 cucumber
1 cup fresh spinach
Dash of salt and pepper
