Roasted Dijon-glazed Chicken Thighs [Phase 1]

Preheat the oven to 400 degrees.

In a small bowl combine the sea salt, pepper and sage.

Put all your ingredients out together to create you mise en place (French for "everything in its place") In another small bowl measure out the dijon.

In another small bowl, melt the coconut oil and mix in the dijon, apple cider vinegar and the seasonings all together.

In a large, greased casserole dish place the chicken thighs in a single layer and smoother with the dijon mixture. Back for approximately 45 minutes or until no longer pink inside.

2 lb boneless-skinless chicken thighs

1/3 cup high quality, no-sugar added Dijon

3 tbsp melted coconut oil

1 tbsp apple cider vinegar

2 tbsp ground sage or 1 tbsp fresh and diced

1/2 tbsp very coarse sea salt

1/2 tsp black pepper
