Roasted Dijon-glazed Chicken Thighs [Phase 1]

Directions

Preheat the oven to 400 degrees.

In a small bowl combine the sea salt, pepper and sage.

Put all your ingredients out together to create you mise en place (French for "everything in its place") In another small bowl measure out the dijon.

In another small bowl, melt the coconut oil and mix in the dijon, apple cider vinegar and the seasonings all together.

In a large, greased casserole dish place the chicken thighs in a single layer and smoother with the dijon mixture. Back for approximately 45 minutes or until no longer pink inside.

2 lb boneless-skinless chicken thighs

1/3 cup high quality, no-sugar added Dijon

3 tbsp melted coconut oil

1 tbsp apple cider vinegar

2 tbsp ground sage or 1 tbsp fresh and diced

1/2 tbsp very coarse sea salt

1/2 tsp black pepper

The boneless, skinless chicken thighs are only 4.5 g fat per 4 oz, so I think it is ok in Phase 1.

They were delicious! I’ve made a similar recipe using butter & cream with the Dijon. This is now my go-to !!! Used the left
over thighs tonight on top of mixed salad using the juices as dressing! Thank you

I used thin chicken breasts. It was very tasty – cooked much quicker. I am sure it is much better with thighs.

This looks delicious, but I thought we could only have boneless,skinless chicken breast Phase1.
Are boneless skinless thighs allowed???
