Beat eggs together with salt, pepper and nutmeg. Set aside.
Cook onion in non-stick skillet on medium heat until transparent, add spinach and cook until just wilted.
Pour eggs over, cover and cook until desired tenderness.
1 cup spinach (fresh or frozen thawed with water squeezed out)
1 medium yellow onion
Salt and pepper to taste
