Using a medium sized bowl, mix in the turkey, scallions, pear, jalapeño, cilantro leaves, ginger root, salt and pepper flakes and mash together. Add 1 ½ teaspoons of the olive oil and form the mixture into 8 even patties.
Use the other 1 ½ teaspoons of olive oil in a large skillet on medium heat. Place the patties in the pan and cook for about 4 minutes on each side, making sure that there is no longer pink in the center. Top the patties with the oranges and serve.
1 pound lean organic ground turkey breast
4 scallions, finely chopped with the bulbs removed
1/2 cup diced pear
1-2 jalapeño peppers, seeds removed and diced
1/4 cup cilantro leaves, diced

3 teaspoons olive oil
4 medium oranges, peeled and cut into wedges
