Veggie Couscous

Directions
Begin by cutting the cauliflower into four sections and cut out the core from each section. Break the pieces into large florets and put them in a food processor. May have to pulse in two batches, just make sure that they do not fill up more than ¾ of the processor.
Pulse the cauliflower in 1-second increments until it starts to look like couscous. Pull out any larger pieces that didn’t get processed enough and put them to the side.
Once you have poured the couscous like cauliflower in a separate bowl, you can pulse the pieces you had set aside again.
