Preheat oven to 300F.
Cut the zucchini into thin slices 1/8 of an inch. Put into water with ice and chill for 10 minutes.
Take out and dry each piece with a paper towel. Coat with Olive oil and salt. Spread the slices on a baking sheet and cook for about 20 minutes (turning once) or until golden brown.
