

Directions
In a bowl layer all the ingredients for the salad. In a small bowl combine the dressing ingredients and stir well with a fork.
Drizzle dressing over the salad and Enjoy!
Ingredients
2 cups shredded spinach or mixed greens
3 oz. cooked chicken (tip cook some chicken ahead of time, or buy canned chicken)
¼ red onion sliced
5 cherry tomatoes halved
½ cup diced mushrooms
3 large radishes, sliced thin
½ green bell pepper sliced thin
Red wine vinaigrette
2 tbsp. red wine vinegar (could use balsamic if desired)
1tsp olive oil
½ tsp salt
1/8tsp black pepper
