In a blender, or food processor place the cauliflower and blend until it resembles rice sized bits.
In a large skillet melt the coconut oil over medium heat, when hot add the diced onion and saute until translucent and fragrant. Add in the garlic and green chilis. Mix well.
Add in the cauliflower rice and saute for 3-4 minutes until softened. Let the cauliflower set for a minute or two in the pan until it becomes a little roasted, then add in the seasonings and lime juice to bring up the brown bits on the bottom of the pan.
Garnish with cilantro and some green onion if desired.
