

Directions
Preheat oven to 350 degrees.
Over medium heat in a small frying pan sauté the onions, jalapeno, and garlic until fragrant and translucent. Add the ground beef and brown over medium heat. When meat is done, add in the diced tomato and salt and pepper. Stir well, spoon the beef mixture into the prepared bell pepper.
In an oven safe baking dish add the pepper and cook for about 15-20 minutes, or until the pepper is slightly softened on the outside. Serve hot!
Optionally (if your calories allow) you could add a tbsp. of Greek yogurt on top, to substitute sour cream.
Ingredients
• 1 garlic clove diced
• ¼ onion diced
• 1 tomato diced
• ¼ jalapeno (seeded and diced)
• ½ tsp salt
• 1/8 tsp black pepper
• 1 medium green bell pepper (with top cut off and seeds and ribs removed with a spoon)
• 2.5 oz. lean ground beef (at least 90/10)
